Here at Norfolk in a box we like to support everything local wherever possible, that’s why we are getting together to support other trusted local businesses. The list of links below is expected to grow, but for now here’s some trusted local Norfolk businesses.

Norfolk Celeriac soup
Ingredients
- 50g Butter
- 1 Norfolk Celeriac, peeled and cubed
- 1 Norfolk Potato, peeled and cubed
- 1 Norfolk Leek, trimmed, washed and roughly sliced
- 1 Norfolk Onion, peeled and roughly chopped
- 1 Garlic clove, sliced
- 1 litre Stock, chicken, vegetable
- Parsley & walnut pesto to serve
Method
Melt the butter in a large, heavy-based pot over a medium-low heat. Add the Norfolk celeriac, Norfolk leek, Norfolk potato, garlic and Norfolk onion, season generously, and gently sweat the vegetables until they’re all starting to soften (this will take about 10 minutes).
Add the stock, bring the soup up to a boil, turn down the heat and simmer for about 20 minutes or until the celeriac is completely tender.
Liquidise until smooth, return to the pan and reheat over a medium flame. Just before serving, check the soup for seasoning and serve with a drizzle of pesto.

Norfolk Celeriac batons with tomato
Ingredients
Serves: 4
- 1 tbsp olive oil
- 2 Norfolk onions, sliced
- 600g English tomatoes, skinned, seeded and chopped
- 2 garlic cloves, crushed
- 1 tbsp chopped fresh Norfolk sage
- 1/2 tsp sugar
1 head Norfolk celeriac, about 500g
salt and freshly ground black pepper
sprig of fresh sage to garnish
Method
Prep:15min › Cook:55min › Ready in:1hr10min
- Heat the oil in a saucepan, add the norfolk onions and cook on a medium heat for 5 minutes. Add the english tomatoes, garlic, sage and sugar, season with salt and pepper, then cover and cook gently for 30 minutes.
- Peel the norfolk celeriac, cut into slices, then cut these into thick 5cm long matchsticks. Add to the tomato sauce with 4 tbsp water. Bring to the boil, cover and simmer gently for a further 20 minutes or until the celeriac is tender. Garnish with fresh sage.
For a sweeter celeriac dish, cut the vegetable into sticks, then cook for 15 minutes in boiling, salted water. Drain, then cook gently in a pan with 30g butter and 2 tbsp raisins for 5 minutes, stirring regularly.

We have had lots of interest on sending theses out as Norfolk Veg Hampers and Norfolk Meat Hampers for your 2019 christmas. To keep the cost down we can only send theses in our normal boxes with our free delivery service in and around Norfolk.
The Norfolk Meat Boxes will come out in there normal insulated delivery boxes with ice pack, the Norfolk Veg Boxes along with their fruits and salad will come our in our normal recyclable Boxes and plastic free.
The range of Meat boxes we have put together are all Norfolk bred animals ,keeping this in line with our Norfolk vegetable boxes.
Delivery of our Norfolk Christmas Boxes will be 21st /22nd December. We already know that Norwich and North Norfolk will be the 22nd as Norwich City Football Team are playing at home on the 21st.
Don’t forget we do have our Norfolk Sweet Tooth Box that we are sending out via parcel delivery. This is perfect for your friends and family who would appreciate the wonderful things with love from Norfolk.
Norfolk Sweet Tooth Box
We at Norfolk in a box have finally done it. Something sweet to add to our local/norfolk range of Norfolk veg boxes ,Norfolk fruit boxes ,Norfolk salad boxes. All with our free delivery locally that we already offer our customers each week.
As you know we love every thing about Norfolk and the Produce grown/produced within it.
We have teamed up with The Norfolk Cake Company to bring you our first Norfolk sweet box. With the Norfolk Cake/Norfolk biscuits, Norfolk Fruit juices and lovely Norfolk honey this has made this possible to put together.
We plan within the next week or so to make this box available to send all over the uk via a courier ,we think this box would make a lovely gift for a birthday or christmas present.
Norfolk pickled onions
Ingredients
- 600ml Malt vinegar
- 500g pickling onions
- 25g table salt
- 100g granulated sugar
- 10 peppercorns
- 2tsp mustard seeds
- 1tsp coriander seeds
- 2 bay leaves
Method
- Put the norfolk onions in a large bowl and tip over a kettle of boiling water. Leave for 20 seconds then pour into a colander, return to the bowl and pour over lots of very cold water. The skins should now peel off very easily.
- Once peeled, layer in a bowl and sprinkle each layer with salt. Cover and leave overnight or up to 24hrs.
- Meanwhile pour the vinegar and sugar into a large saucepan with the peppercorns, mustard seeds and bay leaves. Put the lid on the pan, bring to the boil then remove from the heat and set aside to allow the spices to infuse.
- The following day rinse the onions well and pat dry.
- Pack the norfolk onions into sterilised Kilner® Jars then use a jug to pour over the vinegar, including the mustard, peppercorns and bay, completely covering the onions. Seal and allow to mature for 6 weeks.

How to pickle Norfolk red cabbage
Norfolk red cabbage is in season in Norfolk October ,November and December so is a wonderful ingredient to use in many winter dishes. It is often braised or boiled but by pickling the red cabbage, you can enjoy this vibrant vegetable well after the season has finished.
Ingredients
1l malt vinegar
225g sugar
1 cinnamon stick
1 Norfolk red cabbage
90g salt
1 tsp coriander seeds
Method
1 Heat the vinegar, sugar and spices in a large saucepan over a medium heat, stirring regularly to help dissolve the sugar
2 Once dissolved, remove the pan from the heat and cover. Leave to cool overnight to allow the flavours to infuse
3 In the meantime, core, quarter and finely slice the Norfolk red cabbage. Toss in the salt and leave in the fridge overnight
4 The following day, wash the salt off the Norfolk cabbage and dry with kitchen paper
5 Put the Norfolk cabbage into a sterilised jar
6 Strain the pickling liquid and pour it over the cabbage, ensuring that the leaves are fully submerged
7 Seal the jar and store in a cool, dry place for 1 week before consuming. It will keep in an unopened jar for up to 1 month
Norfolk Romanesco Cheese with Smokey Norfolk Bacon
Norfolk Romanesco has to be one of the most strangest looking vegetables, (Cauliflower from Mars)
Ingredients
- Norfolk Romanesco
- 75g Norfolk Smoked Bacon
- 60g of Grated Mature Cheddar Cheese
For Cheese Sauce
- 70 grams Butter
- 1 tsp Plain Flour
- 1/2 tsp Mustard
- 40g Grated Mature Cheddar Cheese
- 300ml Milk
Method
Prepare and cook the Norfolk Romanesco and Norfolk Bacon
Cut the Norfolk Romanesco into mouth size pieces and steam for 8-10 mins. While the Norfolk Romanesco is steaming, pan fry the Norfolk bacon
Make the cheese sauce
Melt the butter in a pan on a low heat. Stir in the flour, and then as soon as the flour and butter have mixed, steadily pour in the milk and stir. Continue stirring and increase to a moderate heat. As the mixture begins to thicken add in the grated cheese and mustard and stir in.
Assemble and bake
Place the steamed Norfolk Romanesco into an ovenproof dish, pour over the cheese source and mix in the Norfolk bacon. Sprinkle over the grated cheese a place in the oven (200 degrees C) until the cheese goes golden brown to your liking.

Norfolk Damson Gin
Ingredients
- 400g of Norfolk damson, washed
- 200g of sugar
- 700ml of gin
Method
1 Wash the Norfolk damsons and gently prick each one with a fork
2 Place the Norfolk damsons into a clean jar along with the sugar and gin. Close the lid and give it a good shake
3 Store in a cool dark place for 3 months. After 3 months, strain the Norfolk damsons and taste the gin. If you’d like it a little sweeter, you can add more sugar at this stage
4 Transfer to a bottle – your Norfolk damson gin is now ready to drink, though really benefits from ageing. We would recommend making a few batches so you can drink one and keep one for the next year (which will taste even better)
Norfolk Damsons
Norfolk Damson plums contain lots of fruit sugar, which is why they are very nutritious and suited for drying. Thanks to their many dietary fibres, they can help with digestion problems. Off-season, damson plums can be enjoyed as dried prunes, and they have a good effect on the digestive system.
